What Are Microgreens?

Young edible plants harvested just after germination — and why that timing matters.

Microgreens are the young, tender first true leaves of vegetable and herb plants, harvested typically 7 to 21 days after sowing — well before the plant matures into the full vegetable most people recognize.

That early harvest window is the whole point. At this stage, the plant has concentrated flavour and a delicate, tender texture that's different from both a sprout and a mature leafy green.

Because they're harvested so young, microgreens are grown in controlled conditions — typically in trays with a growing medium — rather than in open fields, which lets growers manage freshness and consistency batch by batch.
